Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric
  • 1 can coconut milk 14 oz
  • 1 can diced tomatoes 14 oz
  • 1 can chickpeas, drained and rinsed 14 oz
  • 2 cups spinach, chopped
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions 

  1. Heat oil in a large pan over medium heat. Add onion and cook until soft.
  2. Add garlic and ginger, cook for another minute.
  3. Stir in curry powder, cumin, coriander, and turmeric. Cook for 1-2 minutes.
  4. Pour in coconut milk and diced tomatoes. Bring to a simmer.
  5. Add chickpeas and cook for 10 minutes.
  6. Stir in spinach and cook until wilted. Season with salt and pepper.
  7. Serve over cooked rice.
