Ingredients 

Main Ingredients

  • 1 cup Red Lentils
  • 1 can Coconut Milk 400ml
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 4 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper
  • 1 handful Fresh Cilantro chopped, for garnish

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Stir in the curry powder, ground cumin, and ground turmeric. Cook for another minute.
  4. 4. Add the red lentils, vegetable broth, and coconut milk. Bring to a boil.
  5. 5. Reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  6. 6. Season with salt and black pepper to taste.
  7. 7. Garnish with chopped fresh cilantro before serving.
