Ingredients

  • 1 cup coconut milk
  • 1 cup mango puree
  • 2 tablespoons maple syrup
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions 

  1. In a saucepan, combine coconut milk, mango puree, and maple syrup.
  2. In a small bowl, mix cornstarch with a little water to make a slurry.
  3. Add the slurry to the saucepan and cook over medium heat, stirring constantly until thickened.
  4. Remove from heat and stir in vanilla extract.
  5. Pour into serving dishes and chill in the refrigerator for at least 2 hours before serving.
