Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 4 cups vegetable broth
  • to taste Salt and pepper
  • 2 tablespoon olive oil
  • to garnish Fresh cilantro

Instructions 

  1. Heat olive oil in a pot over medium heat. Add chopped onion, garlic, and ginger. Sauté until fragrant.
  2. Add turmeric, cumin, and coriander. Stir for a minute.
  3. Add red lentils, coconut milk, and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  5. Season with salt and pepper. Garnish with fresh cilantro.
