Ingredients

  • 500 g Green beans trimmed
  • 1 cup Cherry tomatoes halved
  • 1 Red onion small, thinly sliced
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • to taste Salt and pepper

Instructions 

  1. 1. Bring a pot of water to a boil. Add the green beans and cook for 3-5 minutes until tender-crisp.
  2. 2. Drain the green beans and rinse under cold water to stop the cooking process.
  3. 3. In a large bowl, combine the green beans, cherry tomatoes, and red onion.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper to taste.
  5. 5. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
