Ingredients 

Main Ingredients

  • 1 bunch collard greens washed and chopped
  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add collard greens and cook until they start to wilt, about 5 minutes.
  5. Pour in vegetable broth, apple cider vinegar, smoked paprika, salt, and black pepper.
  6. Cover and simmer for 20 minutes, stirring occasionally, until greens are tender.
