Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • ¼ cup chopped cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine quinoa, black beans, corn, bell pepper, avocado, and cilantro.
  6. Drizzle with lime juice, season with salt and pepper, and toss to combine.
