Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • ¼ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Almond milk
  • ¼ cup Vegetable oil

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. Add the almond milk and vegetable oil to the dry ingredients. Stir until just combined.
  4. Pour the batter into a greased muffin tin, filling each cup about ⅔ full.
  5. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
