Ingredients

  • 2 cups Corn kernels fresh or frozen
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Cilantro chopped
  • 2 tablespoons Olive oil
  • 1 tablespoon Lime juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine the corn, cherry tomatoes, cucumber, red onion, and cilantro.
  2. 2. Drizzle the olive oil and lime juice over the salad.
  3. 3. Season with salt and black pepper to taste.
  4. 4. Toss everything together until well combined.
  5. 5. Serve immediately or refrigerate for later.
