Ingredients

  • 2 cups Corn kernels fresh or thawed if frozen
  • 1 Red bell pepper diced
  • ½ cup Red onion finely chopped
  • 1 Jalapeño seeded and minced
  • ¼ cup Cilantro chopped
  • 2 tablespoon Lime juice freshly squeezed
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine the corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add the lime juice, salt, and black pepper. Toss everything together until well mixed.
  3. Let the salsa sit for at least 10 minutes to allow the flavors to meld. Serve and enjoy!
