  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup almond milk
  • ¼ cup vegetable oil
  • 1 can corn kernels, drained
  • 1 can creamed corn

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  3. Add almond milk and vegetable oil, mix until smooth.
  4. Fold in corn kernels and creamed corn.
  5. Pour mixture into a greased casserole dish.
  6. Bake for 45 minutes or until golden brown.
