- 1 cup cornmeal
- 1 cup all-purpose flour
- ¼ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup almond milk
- ¼ cup vegetable oil
- 1 can corn kernels, drained
- 1 can creamed corn
Preheat oven to 375°F (190°C).
In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
Add almond milk and vegetable oil, mix until smooth.
Fold in corn kernels and creamed corn.
Pour mixture into a greased casserole dish.
Bake for 45 minutes or until golden brown.
