Main Ingredients

  • 200 g chickpeas cooked and drained
  • 100 g vegan mayonnaise
  • 50 g mango chutney
  • 1 teaspoon curry powder
  • 1 teaspoon lemon juice
  • 50 g sultanas
  • 1 apple chopped
  • 1 spring onion chopped
  • to taste salt and pepper

Instructions 

  1. 1. In a mixing bowl, mash the chickpeas with a fork until slightly chunky.
  2. 2. Add the vegan mayonnaise, mango chutney, curry powder, and lemon juice. Mix well.
  3. 3. Stir in the sultanas, chopped apple, and spring onion.
  4. 4. Season with salt and pepper to taste.
  5. 5. Serve chilled or at room temperature.
