Couscous Salad Recipe

Main Ingredients
- 1 cup Couscous
- 1 cup Boiling Water
- 1 Cucumber, diced
- 1 Red Bell Pepper, diced
- ¼ cup Red Onion, finely chopped
- ¼ cup Fresh Parsley, chopped
- ¼ cup Fresh Mint, chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. In a large mixing bowl, add the couscous and boiling water. Cover and let it sit for 5 minutes.
2. Fluff the couscous with a fork and let it cool.
3. Add the cucumber, red bell pepper, red onion, parsley, and mint to the couscous.
4. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
5. Serve immediately or chill in the fridge for later.
