Ingredients

  • 2 acorn squashes, halved and seeded
  • 1 cup diced apples
  • ½ cup dried cranberries
  • ½ cup chopped walnuts
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Place the acorn squash halves cut-side down on a baking sheet. Bake for 30 minutes.
  3. In a mixing bowl, combine the apples, cranberries, walnuts, maple syrup, cinnamon, and salt.
  4. Remove the squash from the oven and flip them over. Fill each half with the apple mixture.
  5. Return to the oven and bake for an additional 15 minutes, until the squash is tender and the filling is heated through.
