Cranberry Orange Muffin Recipe

Main Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 0.5 teaspoon salt
- 1 cup fresh cranberries coarsely chopped
- 1 tablespoon orange zest grated
- 1 cup orange juice freshly squeezed
- 0.5 cup coconut oil melted
- 1 teaspoon vanilla extract
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the orange juice, melted coconut oil, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the cranberries and orange zest.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
