Ingredients 

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Fresh cranberries chopped
  • ½ cup Walnuts chopped
  • 1 cup Orange juice freshly squeezed
  • 1 tablespoon Orange zest
  • cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. Add the cranberries and walnuts, stirring to combine.
  4. In another bowl, whisk together the orange juice, orange zest, vegetable oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
