Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 cup dried cranberries
  • ½ cup pecans chopped
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Heat olive oil in a saucepan over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. 2. Add rinsed quinoa to the saucepan and toast for a couple of minutes.
  3. 3. Pour in vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
  4. 4. Stir in dried cranberries, chopped pecans, salt, and black pepper. Cover and let sit for 5 minutes.
  5. 5. Fluff with a fork and serve warm.
