- 1 loaf bread, cubed
- 1 cup vegetable broth
- 1 cup cranberries
- 1 cup pecans, chopped
- 1 onion, diced
- 2 stalks celery, diced
- 2 tablespoon olive oil
- 1 teaspoon sage
- 1 teaspoon thyme
- Salt and pepper to taste
Preheat oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat.
Add onion and celery, sauté until softened.
In a large bowl, combine bread cubes, cranberries, pecans, and sautéed vegetables.
Add sage, thyme, salt, and pepper.
Pour vegetable broth over the mixture and toss to combine.
Transfer to a baking dish and bake for 45 minutes or until golden brown.
