Ingredients

  • 1 loaf bread, cubed
  • 1 cup vegetable broth
  • 1 cup cranberries
  • 1 cup pecans, chopped
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 tablespoon olive oil
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion and celery, sauté until softened.
  4. In a large bowl, combine bread cubes, cranberries, pecans, and sautéed vegetables.
  5. Add sage, thyme, salt, and pepper.
  6. Pour vegetable broth over the mixture and toss to combine.
  7. Transfer to a baking dish and bake for 45 minutes or until golden brown.
