  • 2 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup shelled pistachios
  • ½ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix oats, cranberries, and pistachios.
  3. In another bowl, combine maple syrup, melted coconut oil, vanilla extract, and salt.
  4. Pour wet ingredients into dry ingredients and mix well.
  5. Press mixture into a greased 9x9 inch baking dish.
  6. Bake for 30 minutes or until golden brown.
  7. Let cool before cutting into bars.
