  • 1 cucumber, diced
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions 

  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, chickpeas, bell pepper, and cucumber.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour dressing over quinoa mixture and toss to combine.
  5. Garnish with fresh parsley before serving.
