Ingredients

  • 4 cups Corn kernels fresh or frozen
  • 1 cup Coconut milk full-fat
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper freshly ground

Instructions 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add corn kernels and cook for 5-7 minutes until tender.
  3. Transfer half of the corn to a blender, add coconut milk, and blend until smooth.
  4. Return the blended mixture to the saucepan, add salt and pepper, and cook for another 5 minutes.
  5. Serve warm and enjoy!
