Main Ingredients
- 1 head Broccoli chopped
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk
- 2 tablespoons Olive Oil
- to taste Salt
- to taste Pepper
1. Heat olive oil in a pot over medium heat. Add chopped onion and garlic, sauté until soft.
2. Add chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
3. Remove from heat and let cool slightly. Blend the soup until smooth.
4. Return the soup to the pot, stir in coconut milk, and heat through. Season with salt and pepper to taste.
