Ingredients 

Main Ingredients

  • 2 pounds fresh asparagus trimmed and cut into 1-inch pieces
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until tender.
  2. Add asparagus and vegetable broth. Bring to a boil, then reduce heat and simmer until asparagus is tender, about 10 minutes.
  3. Use an immersion blender to puree the soup until smooth. Stir in coconut milk, and season with salt and pepper.
  4. Simmer for another 5 minutes, then serve hot.
