Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 500 g Mushrooms, sliced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add sliced mushrooms and cook until they release their juices.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Blend the soup until smooth using a blender.
  6. Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste.
  7. Simmer for another 5 minutes before serving.
