Ingredients 

Main Ingredients

  • 1 large cauliflower, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add cauliflower and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until cauliflower is tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in coconut milk, salt, and pepper. Heat through.
