Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
In a blender, combine corn kernels, coconut milk, nutritional yeast, cornstarch, salt, pepper, and smoked paprika. Blend until smooth.
Pour the mixture into the skillet with the sautéed onions and garlic. Cook, stirring constantly, until the mixture thickens.
Transfer the mixture to a greased casserole dish. Bake for 30-35 minutes until the top is golden brown.
Let it cool for a few minutes before serving.
