Ingredients 

Main Ingredients

  • 1 cup Cashews soaked in water for at least 4 hours
  • 2 cups Vegetable Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Coconut Milk
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until onions are translucent.
  3. 3. Add soaked cashews, vegetable broth, and coconut milk to the pot. Bring to a boil.
  4. 4. Reduce heat and let it simmer for 20 minutes.
  5. 5. Transfer the mixture to a blender and blend until smooth.
  6. 6. Return the soup to the pot, season with salt and pepper to taste, and heat through before serving.
