Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped into florets
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk full-fat
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until translucent.
  2. 2. Add chopped cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 20 minutes.
  3. 3. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot, stir in coconut milk, and season with salt and black pepper to taste. Heat through before serving.
