Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced celery
  • 2 cups diced potatoes
  • 6 cups vegetable broth
  • 1 cup chopped tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped kale

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add carrots, celery, and potatoes. Cook for about 5 minutes, stirring occasionally.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Add tomatoes, thyme, basil, salt, and pepper. Simmer for another 10 minutes.
  5. Stir in kale and cook for an additional 5 minutes. Serve hot.
