  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups okra, sliced
  • 1 cup tomatoes, chopped
  • 1 cup vegetable broth
  • 1 teaspoon Creole seasoning
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper, cook until softened.
  3. Add garlic, cook for another minute.
  4. Stir in okra, tomatoes, and vegetable broth.
  5. Season with Creole seasoning, salt, and pepper.
  6. Simmer for 20-25 minutes until vegetables are tender.
