  • 1 teaspoon smoked paprika

  • ½ teaspoon liquid smoke

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine olive oil, soy sauce, maple syrup, smoked paprika, garlic powder, onion powder, and liquid smoke.
  3. Dip each eggplant slice into the mixture, ensuring both sides are coated, and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, flipping halfway through, until the eggplant is crispy.
  5. Remove from the oven and let cool slightly before serving.
