Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups chopped tomatoes
  • 4 cups vegetable broth
  • 1 cup green beans, chopped
  • 1 cup corn kernels
  • 1 cup peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and garlic, cook until softened.
  3. 3. Add carrots and celery, cook for about 5 minutes.
  4. 4. Stir in tomatoes and vegetable broth, bring to a boil.
  5. 5. Add green beans, corn, peas, thyme, and basil. Reduce heat and simmer for 20 minutes.
  6. 6. Season with salt and pepper to taste. Serve hot.
