Ingredients 

Main Ingredients

  • 2 cups dried black beans rinsed and soaked overnight
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • 1 teaspoon salt to taste
  • 1 tablespoon red wine vinegar

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and green bell pepper. Sauté until softened, about 5 minutes.
  3. 3. Stir in the minced garlic, ground cumin, and dried oregano. Cook for another minute.
  4. 4. Add the soaked black beans, bay leaf, and vegetable broth. Bring to a boil.
  5. 5. Reduce heat to low and simmer, covered, for about 45 minutes or until the beans are tender.
  6. 6. Season with salt to taste and stir in the red wine vinegar. Cook for an additional 5 minutes.
  7. 7. Remove the bay leaf and serve hot.
