Ingredients 

Main Ingredients

  • 1 cup white rice
  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • to taste salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Add the rice and stir to coat it in the oil.
  4. 4. Pour in the vegetable broth and bring to a boil.
  5. 5. Reduce the heat to low, cover, and simmer for 20 minutes.
  6. 6. Stir in the black beans, cumin, oregano, salt, and pepper. Cook for another 5 minutes.
  7. 7. Fluff the rice with a fork and serve hot.
