Simple and refreshing vegan cucumber avocado rolls.

Main Ingredients
- 1 cucumber
- 2 avocados
- 1 tablespoon lemon juice
- to taste Salt
- to taste Pepper
- optional Fresh herbs
Slice the cucumber lengthwise into thin strips.
Mash the avocados in a bowl.
Add lemon juice, salt, and pepper to the mashed avocados.
Place a spoonful of the avocado mixture on each cucumber strip.
Roll up the cucumber strips and secure with a toothpick if needed.
Garnish with fresh herbs if desired.
