  • 1 cucumber
  • 2 avocados
  • 1 tablespoon lemon juice
  • to taste Salt
  • to taste Pepper
  • optional Fresh herbs

Instructions 

  1. Slice the cucumber lengthwise into thin strips.
  2. Mash the avocados in a bowl.
  3. Add lemon juice, salt, and pepper to the mashed avocados.
  4. Place a spoonful of the avocado mixture on each cucumber strip.
  5. Roll up the cucumber strips and secure with a toothpick if needed.
  6. Garnish with fresh herbs if desired.
