  • 2 large cucumbers peeled and chopped
  • 0.5 cup fresh mint leaves
  • 0.5 cup sugar
  • 0.25 cup water
  • 2 tablespoons lime juice

Instructions 

  1. Blend cucumbers, mint, sugar, water, and lime juice until smooth.
  2. Strain the mixture to remove solids.
  3. Pour into a shallow dish and freeze for 2 hours.
  4. Scrape with a fork to create a sorbet texture.
