Ingredients 

Main Ingredients

  • 2 cups Sushi rice
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 Cucumber thinly sliced
  • ¼ cup Fresh mint leaves chopped
  • 4 Nori sheets

Instructions 

  1. 1. Rinse the sushi rice under cold water until the water runs clear.
  2. 2. Cook the rice according to the package instructions.
  3. 3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice.
  4. 4. Let the rice cool to room temperature.
  5. 5. Place a nori sheet on the sushi mat. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  6. 6. Arrange cucumber slices and chopped mint leaves in a line along the bottom edge of the rice.
  7. 7. Roll the sushi tightly using the mat. Seal the edge with a bit of water.
  8. 8. Slice the roll into bite-sized pieces with a sharp knife.
  9. 9. Repeat with the remaining ingredients.
