Instructions 

  1. Grate the cucumber and squeeze out excess water.
  2. In a bowl, mix the vegan yogurt, grated cucumber, chopped mint, minced garlic, lemon juice, and salt.
  3. Stir well and refrigerate for at least 30 minutes before serving.
