Cucumber Soup Recipe
A refreshing and light vegan cucumber soup.

Main Ingredients
- 2 cups Cucumber, peeled and chopped
- 1 cup Plain vegan yogurt
- 1 clove Garlic, minced
- 1 tablespoon Olive oil
- 1 tablespoon Lemon juice
- to taste Salt
- to taste Black pepper
1. Combine all ingredients in a blender.
2. Blend until smooth.
3. Chill in the refrigerator for at least 1 hour before serving.
4. Serve cold, garnished with fresh herbs if desired.
