Main Ingredients

  • 2 cups Cucumber, peeled and chopped
  • 1 cup Plain vegan yogurt
  • 1 clove Garlic, minced
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Combine all ingredients in a blender.
  2. 2. Blend until smooth.
  3. 3. Chill in the refrigerator for at least 1 hour before serving.
  4. 4. Serve cold, garnished with fresh herbs if desired.
