  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Non-dairy milk
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the non-dairy milk, vegetable oil, and vanilla extract. Mix until just combined.
  4. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  5. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cupcakes cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
