Curried Cauliflower Soup
A warm, comforting vegan soup with a hint of curry.

Main Ingredients
- 1 head Cauliflower chopped
- 1 tablespoon Olive oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Curry powder
- 4 cups Vegetable broth
- 1 cup Coconut milk
- to taste Salt
- to taste Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and curry powder, cook for another minute.
Add chopped cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth using a blender.
Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
