Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped
  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Curry powder
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and curry powder, cook for another minute.
  4. Add chopped cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth using a blender.
  6. Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
