Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon chili powder
  • 1 can coconut milk
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 2 cups chopped vegetables (e.g., carrots, bell peppers, potatoes)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat oil in a large pot over medium heat. Add onion and garlic, cook until soft.
  2. Stir in curry powder, cumin, coriander, turmeric, and chili powder. Cook for 1 minute.
  3. Add coconut milk, chickpeas, vegetable broth, and chopped vegetables. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes or until vegetables are tender.
  5. Season with salt and pepper. Garnish with fresh cilantro before serving.
