Main Ingredients
- 1 can Chickpeas drained and rinsed
- ¼ cup Vegan Mayo
- 1 tablespoon Curry Powder
- 1 tablespoon Lemon Juice freshly squeezed
- 1 cup Diced Celery
- ¼ cup Chopped Red Onion
- ¼ cup Chopped Fresh Cilantro
- ½ teaspoon Salt or to taste
- ¼ teaspoon Black Pepper or to taste
In a mixing bowl, mash the chickpeas slightly with a fork.
Add the vegan mayo, curry powder, lemon juice, diced celery, chopped red onion, chopped cilantro, salt, and black pepper. Mix well.
Serve immediately or chill in the fridge for an hour to let the flavors meld.
