Curried Chickpea Salad
A delicious and easy vegan curried chickpea salad.

Main Ingredients
- 1 can Chickpeas drained and rinsed
- ¼ cup Vegan Mayo
- 1 tablespoon Curry Powder
- 1 tablespoon Lemon Juice freshly squeezed
- 1 cup Diced Celery
- ¼ cup Chopped Red Onion
- ¼ cup Chopped Fresh Cilantro
- ½ teaspoon Salt or to taste
- ¼ teaspoon Black Pepper or to taste
- In a mixing bowl, mash the chickpeas slightly with a fork. 
- Add the vegan mayo, curry powder, lemon juice, diced celery, chopped red onion, chopped cilantro, salt, and black pepper. Mix well. 
- Serve immediately or chill in the fridge for an hour to let the flavors meld.
