Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon curry powder
  • 3 cups vegetable broth
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 2 potatoes, chopped
  • 1 cup coconut milk
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Stir in the curry powder and cook for another minute.
  4. Add the vegetable broth, carrots, parsnips, and potatoes. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the vegetables are tender.
  5. Remove from heat and blend the soup until smooth using a blender or immersion blender.
  6. Stir in the coconut milk and season with salt and pepper to taste. Serve hot.
