Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and diced
  • 3 medium carrots peeled and sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
  2. 2. Add curry powder, cook for another minute.
  3. 3. Add sweet potatoes, carrots, and vegetable broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
  4. 4. Blend the soup until smooth using a blender. Return to pot.
  5. 5. Stir in coconut milk, season with salt and pepper. Heat through and serve.
