Curried Sweet Potato Carrot Soup
A warm, comforting vegan soup with sweet potatoes and carrots, spiced with curry.

Main Ingredients
- 2 large sweet potatoes peeled and diced
- 3 medium carrots peeled and sliced
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 tablespoon curry powder
- 4 cups vegetable broth
- 1 cup coconut milk
- to taste salt and pepper
1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
2. Add curry powder, cook for another minute.
3. Add sweet potatoes, carrots, and vegetable broth. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
4. Blend the soup until smooth using a blender. Return to pot.
5. Stir in coconut milk, season with salt and pepper. Heat through and serve.
