Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 4 cups Vegetable Broth
  • 1 can Coconut Milk
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Maple Syrup
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until softened.
  3. 3. Stir in curry powder, ground cumin, and ground coriander. Cook for another minute.
  4. 4. Pour in vegetable broth and coconut milk. Bring to a simmer.
  5. 5. Add soy sauce and maple syrup. Season with salt and pepper to taste.
  6. 6. Simmer for 10-15 minutes. Serve hot.
