Deep Dish Pea and Vegetable Casserole

Main Ingredients
- 2 cups peas
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 cup broccoli florets
- 1 cup vegan cheese, shredded
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups vegetable broth
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine peas, carrots, potatoes, and broccoli.
Add olive oil, salt, and black pepper to the vegetables and mix well.
Transfer the vegetable mixture to a baking dish and pour vegetable broth over it.
Sprinkle shredded vegan cheese on top.
Bake in the preheated oven for 40 minutes or until the vegetables are tender and the top is golden brown.
Let it cool for a few minutes before serving.
