  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the vegetable broth to a boil.
  3. 3. Add the quinoa, reduce heat, and simmer for 15 minutes.
  4. 4. In a mixing bowl, combine chopped vegetables, olive oil, salt, and pepper.
  5. 5. Once the quinoa is cooked, mix it with the vegetables.
  6. 6. Serve warm or chilled.
