Ingredients

  • 2 pounds potatoes peeled and cubed
  • 1 cup vegan mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon turmeric
  • 1 teaspoon black salt
  • 1 teaspoon paprika
  • 1 cup diced celery
  • 1 cup diced red onion

Instructions 

  1. 1. Boil the potatoes in a pot until tender, about 15-20 minutes.
  2. 2. Drain and let them cool.
  3. 3. In a mixing bowl, combine vegan mayonnaise, mustard, turmeric, black salt, and paprika.
  4. 4. Add the cooled potatoes, celery, and red onion. Mix well.
  5. 5. Chill in the refrigerator for at least an hour before serving.
