Diced Potato Casserole with Vegetables

- 4 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced bell peppers
- 1 cup diced onions
- 2 cloves garlic, minced
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Preheat oven to 375°F (190°C).
In a large bowl, combine potatoes, carrots, bell peppers, onions, and garlic.
Drizzle with olive oil and sprinkle with salt, pepper, thyme, and rosemary. Toss to coat.
Transfer to a baking dish and spread evenly.
Bake for 45 minutes, stirring halfway through, until vegetables are tender and golden.
