  • 4 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine potatoes, carrots, bell peppers, onions, and garlic.
  3. Drizzle with olive oil and sprinkle with salt, pepper, thyme, and rosemary. Toss to coat.
  4. Transfer to a baking dish and spread evenly.
  5. Bake for 45 minutes, stirring halfway through, until vegetables are tender and golden.
